I like to have some quick and easy breakfasts on hand in the morning, so we can just take something out of the fridge, reheat it in the microwave if needed and start our day. I like to either bake/cook the food in portion sizes (so I will often use a muffin tin or giant muffin tin/popover pan).
I have been experimenting with make-ahead smoothies, but that isn't something I do regularly yet. I also make many variations of oatmeal muffins. Some of them have turned out well, but they're all fairly experimental.
Note: I will be adding to this page frequently, as I'm always finding new ideas to try. I like to bake, and variety makes life interesting.
Crust-less mini quiche (in a muffin tin)- I use this Spinach Quiche recipe but I double the spinach (or collard greens). I use nonstick spray and they come right out of the pan. These can be easily microwaved each morning.
Peanut Butter Banana Oatmeal Squares
These are very good.
Pumpkin Baked Oatmeal
This is delicious, especially with more brown sugar and maple syrup. You could also eliminate the sugar altogether, and just serve with sugar or maple syrup.
